LEMON POSSET: This recipe from Asda is quick to make and serves eight at 77p each.
First, simmer 300ml of double cream and 75g of sugar in a pan for three minutes.
Then whisk in the juice and zest from two lemons before pouring into small pots to chill for three hours. Blitz 100g of strawberries to make a sauce and mix with another 100g before topping the chilled posset.
HONEY NUT CHEESECAKE: Whip up this no-bake cheesecake recipe from Tesco. It serves eight, costing 47p a portion.
Pulse 120g of digestive biscuits with 50g of pistachios. Melt 65g of butter and mix with the biscuits and nuts.
Spoon into your tin, pressing down to compress and leave in the fridge for 20 minutes.
Beat together 200g of cream cheese with 200g of Greek yoghurt, 50g of honey, the juice of half a lemon, two tablespoons of caster sugar and one teaspoon of vanilla extract.
In a small bowl sprinkle a teaspoon of powdered gelatine into two tablespoons of hot water, dissolve, then add to the cream cheese mix.
Pour over the biscuit base and leave to set in the fridge for another four hours. Sprinkle with crushed pistachios.
LIME STRAWBERRY FOOL: This adapted recipe from Sainsbury’s costs 76p per serving, for six.
Add 200g of strawberries and 30g of caster sugar to a pan, stirring over a low heat for five minutes. Add the juice of one lime and chill for an hour.
Stir 200g of strawberries and 30g sugar in a bowl and chill for 30 minutes.
Beat 60ml of whipping cream, then fold in 200g of low-fat yoghurt along with the zest from half a lime and the strawberry sauce.
Spoon the mixture into serving dishes, alternating with strawberries. Finish with sprinkled lime zest.
