YOU NEED:
METHOD: Sift the flour and salt into a bowl. Create a well in the centre and add the egg with about a third of the milk and all of the melted butter.
Combine everything with a whisk. Once all the flour is incorporated, add the remaining milk and, using your whisk, combine it all. Transfer to a jug, rest in the fridge for 30 minutes.
Heat a tiny bit of oil in a non-stick frying pan, just to coat the pan. The pan must get very hot (you’ll start to see smoke) before you add any batter.
Add a ladleful of batter and swirl it to cover the bottom of the pan. Turn the heat down slightly and cook through on both sides until golden.
Use a spatula to turn it, or flip it gently with a flick if you’re feeling lucky. Repeat with the rest of the batter. Serve immediately with your favourite toppings.

YOU NEED:
METHOD: Sift the flour and baking powder into a mixing bowl. Beat together 1 tbsp of syrup, the buttermilk, eggs and 20g of melted butter.
Add to the flour then beat to form a smooth batter. Wipe a small non-stick frying pan with oil and heat until hot. Ladle on a little of the batter and swirl to cover the base.
Cook for a minute, flip and cook for a minute more until golden and fluffy. Repeat with the remaining batter.
Place the apples in a pan with the rest of the butter, cinnamon and 2 tbsp of the golden syrup. Cook for five minutes over a low heat until apples are soft and beginning to caramelise. Spoon over each pancake and drizzle with golden syrup.

A DELICIOUS savoury twist on the classic crepe. Start with the Basic Pancake Recipe then top with this creamy mix of streaky bacon, mushroom and courgette. Serves four.
YOU NEED:
METHOD: Grill the bacon until crispy. Meanwhile, heat the oil and stir-fry the mushrooms for five minutes until softened.
Add the mustard and courgettes and stir-fry for three minutes until they soften a little.
Season to taste and stir in the crème fraîche. Divide between four cooked pancakes and criss-cross two rashers of bacon on top to serve.
