This chicken is amazing on the first day, but it can taste a little dry on the next, so mixing it in another recipe is the way to go. Now, Ree Drummond (aka, The Pioneer Woman) has a brand-new recipe that’ll use up all the leftovers in a delicious, crunchy casserole.
“Casseroles aren’t just for cold weather!” The Pioneer Woman Magazine account wrote on Instagram. “Now that the sun’s setting an hour later, you’re probably craving quick meals that are loaded with comfort and seasonal flavors. ☀️ Enter: Ree’s poppy seed chicken casserole.”
Her Poppy Seed Chicken Casserole is a yummy comfort food made with rotisserie chicken, poppy seeds, a creamy sauce, and a potato chip topping. It’s seriously addictive!
Not only does this recipe help use up your rotisserie chicken, but this poppy seed chicken casserole is also super easy to whip together. Start by whisking cream of chicken soup with sour cream and seasonings. You’ll toss your leftover chicken (with the meat shredded) into the creamy mixture, then layer the entire thing in a 9-by-13-inch baking dish.
Finally, you’ll want to crush potato chips (like Ruffles) and mix with melted butter and poppy seeds. This will create the satisfying crunch that brings the entire meal together. Sprinkle it over the top and bake — it’s really that simple!
I’ve also made this recipe with Ritz crackers instead of potato chips, serving it with a side of roasted broccoli. It’s so good, it’s definitely going to become a family favorite.
