Did You Know Anthropologie Has Recipes? Try Out This Delicious-Looking Basil & Asparagus Soup First

You may know and love Anthropologie for its free-spirited clothing and funky, handmade home decor, but did you know that the brand also has recipes you can try? Dubbed “The Recipe Book,” this page on Anthro’s website is dedicated to “thoughtful dishes designed to look as beautiful as the table they’re served on.” And, in our humble opinion, they’re knocking it out of the park!

Take this Basil & Asparagus Soup, for example. It’s a bright, fresh green color with swirls of cream and hits of crunchy croutons that make it look like a piece of art. And when served in one of Anthropologie’s many beautiful soup bowls, this dish will feel utterly gourmet.

To make the soup, you’ll first want to prepare your croutons. Start by tearing fresh bread and tossing it with olive oil and salt before placing the torn bits on a baking sheet. Bake your croutons for about 15 minutes, or until crispy and golden brown.

While your croutons are in the oven, sauté diced onion in a bit of butter or olive oil until the onion becomes translucent. Then add your sliced asparagus and cook with the onions until the asparagus is tender.

Transfer your onions and asparagus into a blender with chicken or veggie stock, cream, basil, and salt, and blend until the soup is smooth. Season to taste and add a drizzle of lemon juice just before serving to keep the flavors bright and fresh. Serve the soup warm with a bit of cream, sliced chives, and the warm croutons.
