Quick breakfasts make all the difference on busy school mornings. But what do you do when kids get tired of the same breakfast bars or prepackaged snacks every day? Ree Drummond (aka, The Pioneer Woman) just shared a super quick and delicious breakfast recipe that kids — and all chocolate lovers! — will enjoy. Did we mention you can make this ahead of time so it’ll be ready to go in the mornings with your kids? You’ll definitely want to save this recipe!
Drummond’s Triple Chocolate Mini Muffins recipe was featured on the Food Network YouTube Channel, where she demonstrates how easy it is to make. After praising this “incredible” recipe, perfect for an on-the-go breakfast or a tasty chocolate fix, she gets right into it.
Start by chopping up both semi-sweet and dark chocolate, which you’ll set aside until later. For the muffin batter, Drummond adds brown sugar, butter, and more wet ingredients in a bowl. She sifts dry ingredients (like cocoa powder and flour) on top to “help keep the muffins a little bit lighter.”
Now for the best part: add the chocolate! She gently folds it in, and now it’s ready to scoop. She puts them in a mini muffin pan, which bakes quickly and creates 24 “dark and delicious” muffins. She says, “Here’s what I really love about them: they’re every bit as decadent as a chocolate cookie or a chocolate brownie or a chocolate cupcake. But since I’m calling them ‘muffins,’ maybe we could call them a breakfast food!” We’re totally with you, girl!
Just send the kids with a banana and it’ll balance it all out, right? If you still don’t feel right about serving these at breakfast, keep them for an after-school snack instead. Either way, making these is a win-win — and your kids will be super impressed!
