Chicken nuggets and ketchup are a staple in my house, and — other than pizza night — it’s the only dinner I can guarantee my kids won’t turn down. Of course, if they had it their way, they would eat buckets of strawberries, peaches, watermelon, and all other kinds of fruit for every meal instead. Ree Drummond (aka, The Pioneer Woman) understands the struggle, which is why she used a favorite summer fruit to make a delicious (and kid-friendly!) dinner. And I actually think my kids would love this as much as I would!
In a new video posted to the Food Network YouTube Channel, Drummond shared her recipe for Sticky Blueberry Wings that look so good. “In my world, wings are absolutely everywhere and berries are absolutely everywhere. I love them in any form,” she says in the video, adding that these are “so good” and a “change up from regular buffalo wings.”
She adds, “They are absolutely — I’m gonna say it — berry-licious!”
This super easy recipe takes less than an hour to prepare from start-to-finish, and it’s so good, it’s worth every minute. Start by making the wings, where you will sprinkle garlic salt and other seasoning over the raw wings. Put it on a rack over a sheet pan, lined with foil, and spread out the wings to cook them.
Next, she makes the sticky blueberry sauce. You’ll use both blueberry preserves and fresh blueberries, diced jalapenos to make it spicy, and other ingredients for this part. Pour it all into a saucepan, stirring it occasionally as it thickens.
Once the wings are out of the oven, they are ready for part two! She puts the slightly golden wings into a bowl, where the sauce gets poured over them. She mixes it all together, ensuring that “there is not a single bit of wing that is not totally coated in sauce.” From there, they go back on the pan and back in the oven, this time on broil mode. The finished result looks like fabulous “showstopping wings,” and we can practically smell them through our screens.
“These are the kind of wings where you just take a bite of, and you cannot stop. They are scrumptious!” she says, adding that they just need a salad and some biscuits to turn them into a full meal, or serve as is for an appetizer.
