ROTTERDAM, N.Y. (NEWS10) -- Nikki P's, a pizzeria, deli, and bakery located at 1045 Community Road in Rotterdam, has closed its doors after 24 years. The eatery officially closed for business on Friday, June 21.
In a lengthy goodbye post on Facebook, one of the owners wrote, "Life is beyond short, the last four months have taught our family that lesson, the hardest lesson of all I believe, but our family is ready and hopeful for the next chapter: well deserved retirements, new career opportunities, moves to follow our hearts and dreams. We know that none of the good would be possible without the support and love we’ve been shown from our families, friends, community, all of you."
In 1991, Kristine Palluti-Gnidowski and Michael Gnidowski opened Kristine’s Bakery in Guilderland. They then opened Nikki P's in 2000. Kristine passed away a few months ago in January.
Nikki P's served pizza, wings, calzones, salads, subs, wraps, burgers, bread, pastries, and more. Specialties included its Chicken Wing Pizza, Taco Pizza, and "Big Mac" Pizza.
As for the future of Nikki P's, the owners said they hope to soon have some updates about the Community Road building and they have some other "things in the works." You can look for updates on the Nikki P's Facebook page.
"And to our customers, I have my family because of Nikki P’s. Some of our best friends started as customers. You’ve loved us, supported us through gains and losses, some more so than we could’ve ever imagined," read the post. "My mom always always said 'We’d be nothing without our customers,' and I can only hope we’ve treated you half as well as you’ve treated us. We are forever grateful to you all."
